Menudo

Menudo is a favorite Filipino dish which can be served on a day-to-day meal or for gatherings or specialoccasions. This sounds like Spanish food but it's actually Filipino style. The food and its name were derived from Spanish due to Philippines was colonized by Spaniards for hundreds of years a long time ago. Today, Menudo is a staple entrĂ©e in the Filipino table and is often served on, but not limited to, special occasions.

The dish is made from a base of garlic, onions, and tomatoes. Sliced or diced pork and liver are then added. To make this a complete dish in itself there are variations on the vegetables that are placed such as: diced potations, raisins, diced, green peas, carrots, green bell peppers, soy sauce, and vinegar. The distinct color and taste comes from the mixture of calamansi and tomato sauce. Some recipes add hotdog or sausage for added meat and flavor.

 

Today, cooking Menudo has become a lot easier because there are flavored mixes available in grocery stores.
