Popular restaurateur Margarita Fores owns and supervises Cafe Bola. She was one of the minds behind dishes like Spicy Tuyo Fillets and Kesong Puti Cheesecake. Both dishes use savory local ingredients (the tuyo' and the kesong puti') that are frequently ignored in classy restaurants. When they were given the different twist, cooked far away from how Filipinos knew how, the ingredients proved to be worthy enough to be on spotlight.
Kesong puti is the Filipino version of cottage cheese. This valuable piece is mostly enjoyed with pan de sal but never would you imagine it to be on top of a pasta dish. Cafe Bola changes that concept beautifully by using kesong puti sparingly in its array of not just pasta dishes but rice meals as well. The tuyo or dried fish, meanwhile, has never been cooked differently aside from fried. It is a staple in an authentic Filipino breakfast, going well with garlicky fried rice. Then again, Fores and every one in Cafe Bola thought otherwise. They proved tuyo could well be an ingredient of a gourmet meal.
Cafe Bola is about every thing unique. Fores made sure that every Cafe Bola experience that you will have is nothing like you have had in other places. She used traditional recipes but did it in a very untraditional way, which is both exciting and amusing at the same time.
There are quite a few restaurants carrying the Fores signature. The advantage of Cafe Bola over the others is in the price. Eating at Cafe Bola is affordable. A full meal would not cost you more than USD10. The serving size is but right for one person who does not want to be left unsatisfied nor overstuffed.
