Bistro Filipino

Bistro Filipino takes the homey heart-warming flavours of Filipino cooking and elevates them to a more sophisticated interpretation. The trio of appetisers is the perfect way to try any combination of your choice. The ubod lumpia, a crispy fried spring roll cone filled with shredded heart of palm and Spanish sausage, is topped with a spicy vinegar sorbet that gives it a very nice bite.

For sauce lovers, the sinampalukan manok, a clay pot-roasted chicken in tamarind Dijon cream, hits the right notes. The chicken is cooked so well that it falls off the bone while the distinct tamarind flavour really soars. The chef Laudico benefits from using classical French techniques to interpret hearty and robust Filipino cuisine.

Desserts by his wife the pastry chef Jacqueline, are definitely a strong point. The halo-halo Napoleon combines very fine layers of yam-flavoured wafers with a subtle carabao milk sorbet, poached native fruit and luscious mango ice cream. It is a light and refreshing way to cap your meal. Not extensive but offers a fair amount of moderately priced European wines. Worth trying are their signature cocktail "lambinis," using lambanog and native fruit.
