Thinly sliced sirloin beef is the most common type of meat used for this dish although you can still use other cuts of beef or even pork. The beef is usually marinated for a few hours (although it is ideal to marinate it over night to absorb all of the flavor). The marinade used is a mixture of calamansi or lemon juice, soy sauce, vinegar, salt and pepper. The beef is then stir fried until the meat is tender. It is served with caramelized onions on top.
